eggs emery

perfectly poached free-range eggs on a bed of gruyere cheese, diced and sauteed red pepper, and creamed corn on wholewheat toast, served with salsa and sauteed mushrooms

I must try this. What do you do with the creamed corn and red pep?

Hi Joe

I microwave the creamed corn on toast for 20-30 seconds right before serving, and the red pepper is just diced and sauteed. One of my faves, this. Which is obvious I suppose, as our friends have had it so often it's now named after us.
